Employers in this subcode cover the full spectrum of meat processing activities including slaughtering (abattoirs), production of first and early cuts, portion cutting and processing of meat products. Employers in this subcode range from full sized integrated processing plants to smaller sized specialty operations. Some employers do not slaughter and will purchase halves, quarters, bulk or boxed meats or meat trimmings for further portion cutting or production of meat products such as sausage, hamburgers, salami, jerky, pepperoni, etc. Processes may be fully automated, semi-automated or manual, and have the production capacity to service the wholesale distribution and/or hotel, restaurant, and institutional markets.
Employers in this subcode include those who custom slaughter livestock for farmers. Once the animal is slaughtered, the carcass is portion cut as required. Employers may also receive slaughtered animals from farmers or hunters for further portion cutting.
